Ingredients:


- 2 slices of your favorite bread (such as whole wheat, multigrain, or sourdough)

- Hummus or your favorite spread (such as avocado spread, pesto, or mustard)

- Assorted vegetables (such as lettuce, tomato, cucumber, bell pepper, red onion, sprouts, shredded carrots, etc.)

- Optional additions: sliced avocado, roasted vegetables, pickles, olives, sun-dried tomatoes, etc.

- Salt and pepper to taste

- Optional: cheese slices or vegan cheese (if desired)


Instructions:


1. Spread a layer of hummus or your favorite spread on one side of each slice of bread.


2. Layer the assorted vegetables on one slice of bread, arranging them evenly to cover the entire surface. Season with salt and pepper to taste.


3. If using, add sliced avocado or any other optional additions on top of the vegetables.


4. If desired, add cheese slices or vegan cheese on top of the vegetables.


5. Place the second slice of bread on top of the vegetables, spread-side down, to form a sandwich.


6. Gently press down on the sandwich to help the ingredients stick together.


7. Slice the sandwich in half diagonally or vertically, if desired.


8. Serve the veggie sandwich immediately or wrap it in parchment paper or plastic wrap for a portable meal.
