Ingredients:


500g (about 4 cups) bread flour

100g (about 3/4 cup) whole grain flour (such as whole wheat or rye flour)

10g (about 2 teaspoons) salt

7g (about 2 1/4 teaspoons) instant yeast

350ml (about 1 1/2 cups) lukewarm water

Cornmeal or semolina flour, for dusting


Instructions:


In a large mixing bowl, combine the bread flour, whole grain flour, salt, and instant yeast.

Gradually add the lukewarm water to the dry ingredients, stirring with a wooden spoon until a rough dough forms.

Turn the dough out onto a floured surface and knead for about 10-15 minutes, until the dough is smooth and elastic.

Place the dough in a lightly oiled bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm, draft-free place for about 1-2 hours, or until doubled in size.

Once the dough has risen, punch it down and divide it into two equal portions.

Shape each portion into a baguette shape by gently rolling and elongating the dough.

Place the shaped baguettes on a baking sheet lined with parchment paper dusted with cornmeal or semolina flour.

Cover the baguettes with a clean kitchen towel and let them rise for another 30-45 minutes, or until slightly puffed.

Preheat your oven to 425°F (220°C).

Before baking, slash the tops of the baguettes with a sharp knife or razor blade to create decorative cuts.

Bake the baguettes in the preheated oven for 20-25 minutes, or until golden brown and hollow-sounding when tapped on the bottom.

Remove the baguettes from the oven and let them cool on a wire rack before slicing and serving.
