Here's a recipe for Lentil & Chickpea Burgers:


Ingredients:


- 1 cup cooked lentils

- 1 cup cooked chickpeas

- 1 small onion, finely chopped

- 2 cloves garlic, minced

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1/2 teaspoon smoked paprika

- Salt and pepper to taste

- 1/4 cup breadcrumbs

- 1/4 cup chopped fresh parsley or cilantro

- 1 tablespoon olive oil

- Burger buns

- Toppings of your choice (lettuce, tomato, onion, avocado, etc.)


Instructions:


1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.


2. In a large mixing bowl, mash the cooked lentils and chickpeas together with a fork or potato masher until they are mostly mashed but still have some texture.


3. Add the chopped onion, minced garlic, ground cumin, ground coriander, smoked paprika, salt, pepper, breadcrumbs, and chopped parsley or cilantro to the bowl. Mix until well combined.


4. Divide the mixture into equal portions and shape each portion into a burger patty.


5. Heat the olive oil in a skillet over medium heat. Once hot, add the burger patties and cook for 3-4 minutes on each side, or until golden brown and crispy.


6. Transfer the cooked burger patties to the prepared baking sheet and bake in the preheated oven for 10-15 minutes, or until heated through.


7. While the patties are baking, prepare the burger buns and toppings.


8. Once the patties are done, assemble the burgers by placing each patty on a burger bun and adding your desired toppings.


9. Serve the Lentil & Chickpea Burgers immediately and enjoy!
